Hot Sauce is a common condiment in many households, used to spice up everything from breakfast to dinner. It appears to have a relatively simple ingredient list (In the case of the hot sauce in question, Frank’s Red Hot Sauce) but what ARE those ingredients and why are they there? The main ingredient in Frank's Red Hot is Aged Cayenne Peppers. While also adding flavor, these peppers contain a special substance that is the key to every good hot sauce. Capsaicin (C18H27NO3), a substance derived from certain peppers is what gives hot sauces their kick. In the case of Frank’s Red Hot Sauce, the capsaicin is present in the Aged Red Cayenne Peppers. It can either be in the form of a crystalline white powder or, more commonly, a transparent oil. Capsaicin is toxic, as it has a volatile odor and causes stinging sensations on your tongue when ingested. The amount of capsaicin in most commercial hot sauces, however, is nowhere near dangerous.
